Choosing the Right Chocolate Mold
Both plastic and silicone molds work well for filled chocolates, but each has its advantages.
Plastic Chocolate Molds
Clear plastic candy molds are the traditional choice for molded chocolates. They produce glossy, professional-looking candies with crisp details and are ideal for holiday chocolates, chocolate-covered Oreos, candy bars, seasonal shapes, and molded bonbons. Plastic molds are an excellent choice when appearance is your top priority. Another advantage of clear molds is that you can see through them as you work. Before the chocolate sets, hold the mold up to the light and inspect each cavity for trapped air bubbles, which appear as small air pockets or gaps against the mold surface. Gently tap the mold on your countertop to release the bubbles, or use a toothpick to guide stubborn bubbles to the surface. Taking this extra step helps ensure your finished chocolates have a smooth, flawless appearance with sharp, well-defined details.

Silicone Candy Molds
Silicone molds are flexible, making it easy to remove delicate chocolates without cracking them. They are especially useful for geometric designs, larger treats, hot cocoa bombs, breakable hearts, mousse desserts, and frozen treats. Their flexibility also makes them popular with beginners.

Step 1: Create the Chocolate Shell
Melt your Merckens chocolate or candy coating according to the manufacturer's directions.
Fill each cavity completely with melted chocolate.
Tap the mold gently on your work surface to remove air bubbles.
Turn the mold upside down over a bowl, allowing the excess chocolate to drain out while leaving a thin coating on the sides.
Scrape the surface clean with a bench scraper or offset spatula.
Allow the shell to harden completely before adding the filling.
Step 2: Add the Soft Candy Filling
Once the chocolate shell has set, snip the corner of Squeeze-Ums Soft Candy Filling to pipe into each cavity.
Fill only about 75% to 85% of the cavity, leaving enough room for the chocolate backing.
Avoid overfilling, as the chocolate needs space to seal completely around the filling.
Because Squeeze-Ums is ready to use, there's no cooking, mixing, or thinning required.
Step 3: Seal the Chocolate
Cover the filled cavities with more melted chocolate.
Spread the chocolate evenly across the mold.
Scrape away excess chocolate for a smooth back.
Allow the chocolates to harden completely before unmolding.
